Casa Eladio was founded in 1965, by Eladio Cabello Serrano, It was managed by José Eladio Cabello Santaella (Founders' son) for 38 years during the golden age of Marbella.
It has a contemporary, maritime-inspired décor which has been given a new lease of life, with José's son, Carlos Cabello Jimenez (family's third-generation) now working in the kitchen.
Carlos worked in Northern Spain and Málaga before returning to the family restaurant in Marbella. Over time, he has updated the traditional menu, to make it, a little more contemporary, with a focus on seasonal, locally sourced ingredients.
On a cool Marbella evening, we decide to take the short, tasting menu.
We started with good bread
and excellent EVOO (extra virgin Olive oil) from Cortijo El Solano.
Salmorejo with strawberries, raspberries and grated black olives .
Spicy pork sausage, truffled Robuchon mashed potato, egg yolk and crispy paprika.
White prawn from Marbella, juice from their heads, pickled chives and citrus pepper sauce.
Tuna, with a seaweed sauce, plus amaranth seeds (this was an additional dish, not on the menu).
Low-temperature rib of veal, strawberry hoisin, pickled cucumber and grapes
Andalucian Cheese course (all goats milk) cured or raw, with mango jam.

s-naia 2019 (D.O.Rueda).
Cortijo Los Aguilares Tinto 2019 (D.O.Ronda).
