During a big snowstorm, we had an excellent dining experience here in the Chueca district of Madrid. It is a modern-style asador where they serve good, honest food in a wonderful setting with an open fire.
All the tasty, healthy, and organic produce is from their garden farm in Ávila, in the rolling hills and countryside northwest of Madrid.
To start, we had the highly recommended,
Torrenznos Roostiq (Roostiq's fried belly pork)

There are many, many torreznos, but everyone thinks theirs is the best. Roostiq's are fantastic. They are juicy, soft, and crispy, with hardly any fat. If you like, or more still, love torreznos, this is the place to come. The sommelier, Esteban, recommended that Cava go with the torreznos.

Followed by
Espinacas y rúcula a la brasa con huevos plancha y vinagreta de bacon.
(grilled spinach and arugula with fried eggs and bacon vinaigrette).

Acelgas salteadas a la llama (chard, sautéed over the flame).

Brownie blanco y negro (brownie black & white).

The excellent wines recommended by Esteban were,
Mas Xarot Gran Reserva 2013 - Monastell.

Leirana Albariño Forjas Del Salnes 2018 - Rias Baixas.

De Blas Serrano Phylos 2014 Tinto del Pais - Ribera del Duero.

A sweet, Artadi El Seque 2015 - Alicante.

Service was excellent and obliging.
